What’s for Dinner? Beets Me

A good friend has a rigid routine of what he eats each day.  Come to think of it, I have a fairly rigid routine, too.

Here is what I enjoy eating:

A Big Breakfast

I like to make a smoothie. I use cherries, blueberrie, and strawberries from Costco. I add a banana, half an apple, almond milk and water, or orange juice and almond milk.  I make five cups of smoothie in my Vitamix. I drink two cups for breakfast — one cup with Metamucil and a multi-vitamin. I take the rest in a Rubbermaid water bottle and drink it during the day.

I like to mix one real egg with the equivalent of one or two Eggbeater eggs. I either fry it with brown butter or put a piece of high fiber wheat bread from Trader Joe’s in a bowl with the egg mixture and make French toast with maple syrup.

I like to make my own granola cereal. I mix rolled oats, high-fiber cereal, coconut flakes, pecans, walnuts and almonds with honey and olive oil, and bake for 11 minutes.

A Smaller Lunch

I like to make tuna in the food processor. I use one can of tuna, mayonnaise, onions, celery and dill.

A Full Dinner

It’s usually chicken or salmon for dinner.

I like my wife’s 40-garlic chicken or my smoked chicken.

A leg and a thigh usually will do.

I like salmon in the oven, or on the barbecue.

I like yams and baked potato, Love Beets from Costco, and broccoli. My wife makes a regular salad, which I like to mix with either tahini or humus salad dressing.

Come to think about it, how rigid is your daily eating routine?  Hey, if you don’t mind just a little flexibility in your meal plan, I recommend those fully cooked Love Beets from Costco.
